Here’s a simple and refreshing recipe for a Baby Leaf Salad with Lemon Vinaigrette:

Ingredients:

For the salad:
– 4 cups mixed baby salad leaves (such as baby spinach, arugula, and mixed greens)

– 1 cup cherry tomatoes, halved

– 1/4 red onion, thinly sliced

– 1/2 cucumber, thinly sliced

– 1/4 cup crumbled feta cheese (optional)

– 1/4 cup toasted nuts or seeds (such as almonds, walnuts, or pumpkin seeds)

For the lemon vinaigrette:
– 1/4 cup extra virgin olive oil
– 2 tablespoons fresh lemon juice
