Garlic Confit (Soft, Spreadable & Infused in Olive Oil)
Mellow, golden garlic that melts in your mouth.
Ingredients:

2–3 whole heads of Spanish garlic, peeled
-
1–1½ cups extra virgin olive oil
(enough to fully submerge cloves)

Optional: sprigs of thyme, rosemary, or a few peppercorns
Instructions:

Peel all garlic cloves and place them in a small saucepan.

Cover with olive oil and add any herbs or spices you like.

Cook over very low heat (barely a simmer) for 30–40 minutes, until cloves are soft, golden, and tender.

Let cool, then store in a clean jar, fully submerged in oil.

Keep refrigerated and use within 1–2 weeks.
Use the soft cloves in spreads, on toast, in pastas, or salad dressings. The infused oil is liquid gold!
