Ingredients:
– 4 large brown onions, thinly sliced
– 4 tablespoons unsalted butter
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1/2 cup dry white wine (optional)
– 6 cups beef broth
– 1 tablespoon Worcestershire sauce
– Salt and pepper to taste
– Baguette slices
– Gruyere cheese, grated
– Fresh thyme for garnish (optional)

Instructions:
1. In a large pot or Dutch oven, melt the butter and olive oil over medium heat.

2. Add the sliced onions to the pot and cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.

3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

4. Optional: Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.

5. Add beef broth and Worcestershire sauce to the pot. Bring to a simmer and cook for 15-20 minutes to allow flavours to meld. Season with salt and pepper to taste.

6. Preheat the broiler. Ladle the soup into oven-safe bowls.

7. Top each bowl with baguette slices and a generous amount of grated Gruyere cheese.

8. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
