(Plus olive oil, salt, pepper & dried herbs)
π©βπ³ How To Make It:
1οΈβ£ Preheat oven to 200Β°C (fan 180Β°C).
2οΈβ£ Chop potatoes into chunks (no need to peel if washed well).
Slice carrots and onions into wedges.
3οΈβ£ Toss potatoes, carrots and onions in olive oil, salt, pepper and herbs.
Spread on a large baking tray.
4οΈβ£ Roast for 25 minutes.
5οΈβ£ Add sliced peppers and broccoli. Roast for another 15 minutes.
6οΈβ£ Add cherry tomatoes for the final 10 minutes until soft and juicy.
7οΈβ£ Finish with chopped spring onions and a drizzle of olive oil.
