π 1kg Sweet Potatoes (cubed)

π₯ 3 Baking Potatoes (chunked)

π₯ 500g Carrots (chopped)

πΏ 2 Parsnips (chunked)

π 1 Butternut Squash (cubed)

π₯¦ 1 Broccoli or Tenderstem (added later)

π§ 2 Leeks (thick slices)

π Chestnut Mushrooms

πΏ Fresh Thyme

π§ 2β3 cloves garlic (optional)

π« Olive oil

π§ Salt & pepper

1οΈβ£ Prep
Preheat oven to 200Β°C / 180Β°C fan.
Chop all root veg into even chunks.2οΈβ£ Roast the Roots
Add sweet potato, baking potatoes, carrots, parsnips and squash to a large tray.
Drizzle with olive oil π«, add salt, pepper and fresh thyme πΏ.
Roast for 30 minutes.3οΈβ£ Add the Rest
Add leeks π§ and mushrooms π.
Roast another 15β20 minutes.Add broccoli for the final 10β12 minutes so it stays tender and slightly crisp π₯¦.
4οΈβ£ Serve
Serve as a main with gravy π½οΈ or as a side to roast chicken, sausages or a nut roast.
