๐ 1kg Sweet Potatoes (cubed)

๐ฅ 3 Baking Potatoes (chunked)

๐ฅ 500g Carrots (chopped)

๐ฟ 2 Parsnips (chunked)

๐ 1 Butternut Squash (cubed)

๐ฅฆ 1 Broccoli or Tenderstem (added later)

๐ง 2 Leeks (thick slices)

๐ Chestnut Mushrooms

๐ฟ Fresh Thyme

๐ง 2โ3 cloves garlic (optional)

๐ซ Olive oil

๐ง Salt & pepper
๐ฉโ๐ณ Method
1๏ธโฃ Prep
Preheat oven to 200ยฐC / 180ยฐC fan.
Chop all root veg into even chunks.2๏ธโฃ Roast the Roots
Add sweet potato, baking potatoes, carrots, parsnips and squash to a large tray.
Drizzle with olive oil ๐ซ, add salt, pepper and fresh thyme ๐ฟ.
Roast for 30 minutes.3๏ธโฃ Add the Rest
Add leeks ๐ง and mushrooms ๐.
Roast another 15โ20 minutes.Add broccoli for the final 10โ12 minutes so it stays tender and slightly crisp ๐ฅฆ.
4๏ธโฃ Serve
Serve as a main with gravy ๐ฝ๏ธ or as a side to roast chicken, sausages or a nut roast.
