Here’s a simple and delicious Tarragon Chicken recipe:

Ingredients:

  • 4 chicken breasts (boneless, skinless)
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp fresh tarragon, chopped (or 1 tbsp dried)
  • Salt and pepper, to taste

Instructions:

  1. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook them in the skillet for about 6-7 minutes per side, or until fully cooked. Remove the chicken from the skillet and set aside.
  2. Make the sauce: In the same skillet, add chopped onion and garlic. Sauté for 2-3 minutes until softened. Add chicken broth and bring to a simmer. Let it reduce by half, about 5 minutes.
  3. Finish the sauce: Stir in the heavy cream and fresh tarragon. Let the sauce simmer for 2-3 minutes to thicken.
  4. Combine and serve: Return the chicken to the skillet and coat it with the tarragon sauce. Let everything simmer for a few more minutes.
  5. Serve: Garnish with additional tarragon and serve the chicken with rice, mashed potatoes, or steamed vegetables.
