🛒 Ingredients (Serves 2):

150g fresh Shiitake Mushrooms, sliced 🍄

1 tbsp sesame oil

2 cloves garlic, minced 🧄

1 tsp grated ginger
-
2 tbsp soy sauce
-
1 tsp rice vinegar or lime juice 🍋

Optional: chili flakes, sesame seeds, spring onions, tofu
👩🍳 Instructions:

Heat sesame oil in a pan or wok over medium-high heat.

Add garlic and ginger; sauté until fragrant (30 seconds).

Toss in shiitake mushrooms and cook for 5–7 minutes until tender and golden.

🍄🍝🌿 Creamy Shiitake Mushroom Pasta
Rich, savoury, and full of umami — without the meat.
🛒 Ingredients (Serves 2):

150g fresh Shiitake Mushrooms, sliced

200g pasta of your choice (tagliatelle, linguine, penne) 🍝

1 tbsp olive oil
-
2 cloves garlic, minced 🧄
-
100ml plant-based cream or single cream 🌱
-
1 tsp soy sauce or tamari
-
Salt & black pepper to taste
-
Optional: fresh parsley, nutritional yeast, or vegan parmesan 🌿🧂
👩🍳 Instructions:

Cook pasta according to package instructions. Reserve some pasta water.

While pasta cooks, heat olive oil in a pan over medium heat.

Sauté garlic for 30 seconds, then add shiitake mushrooms.

Cook mushrooms for 5–7 mins until tender and lightly golden.

Stir in soy sauce and cream, simmer for 2–3 mins.

Add cooked pasta to the pan, toss well. Add pasta water if needed to loosen the sauce.
