Mrs Darlington’s Farmer Tom’s Pickle. Made with Love by: Darlington & Daughters, Lancaster Flied. Over 30 years ago, a surplus of our farm gave me the idea to make a batch of my Lemon Curd to sell locally. It flew off the shelves: so I drafted  in local ladies to help me make my other family recipes too. We’ve grown a great since then, but bringing you delicious tasing products is what my daughter and I remain  passionate about. Ingredients: 

Onion, Bramley Apple, Sugar, Carrot, Malt Vinegar ( From Barley ), Swede, Cauliflower, Tomato Puree, Gherkin, Modified Maize Starch, Salt, Stabiliser (Pectin), Mustard, Spice, Colour: Natural Caramel.

Recipe :

Here’s a recipe inspired by Mrs. Darlington’s Farmer Tom’s Pickle:

Ingredients:
– 1 large cucumber, thinly sliced
– 1 small red onion, thinly sliced
– 1/2 cup apple cider vinegar

– 1 cup white vinegar

– 1 green bell pepper, thinly sliced
– 1/2 cup granulated sugar
– 1 tablespoon mustard seeds
– 1 teaspoon turmeric
– 1/2 teaspoon black peppercorns

– 1 teaspoon celery seeds
– 1/2 teaspoon salt

– 1 red bell pepper, thinly sliced

Instructions:
1. In a large saucepan, combine the white vinegar, apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric, black peppercorns, and salt. Bring to a boil over medium heat, stirring until the sugar is dissolved.

2. Add the sliced cucumber, red bell pepper, green bell pepper, and red onion to the saucepan. Stir to combine.

3. Reduce the heat to low and simmer the mixture for 5-7 minutes, until the vegetables are slightly softened but still crisp.

4. Remove the saucepan from the heat and let the pickle mixture cool to room temperature.

5. Transfer the cooled pickle mixture to sterilized jars, making sure the vegetables are submerged in the liquid.

6. Seal the jars tightly and refrigerate for at least 24 hours before serving to allow the flavours to meld together.
