Mrs Darlington’s Caramelised Onion Chutney. Made with Love by: Darlington & Daughters, Lancaster Flied. Over 30 years ago, a surplus of our farm gave me the idea to make a batch of my Lemon Curd to sell locally. It flew off the shelves: so I drafted in local ladies to help me make my other family recipes too. We’ve grown a great since then, but bringing you delicious tasing products is what my daughter and I remain passionate about. Here’s a recipe for Caramelized Onion Chutney inspired by Mrs. Darlington’s:
Ingredients:
– 4 large onions, thinly sliced
– 2 tablespoons olive oil
– 1/4 cup brown sugar
– 1/4 cup red wine (optional)
– 1 teaspoon dried thyme
– 1/4 cup balsamic vinegar
– Salt and pepper to taste
Instructions:
1. Heat olive oil in a large skillet over medium-low heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 30-40 minutes.
2. Once the onions are caramelized, add the brown sugar, balsamic vinegar, and red wine (if using) to the skillet. Stir to combine.
3. Continue cooking the mixture over low heat, stirring occasionally, until the chutney thickens and becomes syrupy, about 15-20 minutes.
4. Stir in the dried thyme and season with salt and pepper to taste.
5. Remove from heat and let the chutney cool to room temperature before transferring it to a jar or airtight container.
6. Store the Caramelized Onion Chutney in the refrigerator for up to two weeks.
