Recipe for a Great Mango Chutney

Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup onion, finely chopped
  • 1/4 cup raisins
  • 1/4 cup brown sugar
  • 1/2 cup white vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon chili flakes (optional, for heat)
  • Salt to taste

Instructions:

  1. In a medium saucepan, combine all the ingredients: diced mango, onion, raisins, brown sugar, vinegar, ginger, cinnamon, cumin, cloves, and chili flakes.
  2. Bring the mixture to a simmer over medium heat. Stir occasionally to prevent sticking.
  3. Cook for 30-40 minutes, or until the chutney thickens and the mango becomes tender. Stir occasionally to ensure even cooking.
  4. Once thickened, remove from heat and let it cool.
  5. Transfer the chutney to a jar or container and refrigerate. It will keep for up to 2 weeks.
