  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

  • 2 medium Kohlrabi, peeled and cubed
  • 1½ tbsp olive oil 🫒
  • 2 garlic cloves, finely chopped 🧄
  • ½ tsp dried thyme or mixed herbs 🌿
  • Salt and black pepper
  • Squeeze of fresh lemon 🍋
  • Optional: grated Parmesan for serving 🧀

👩‍🍳 Instructions

  1. Preheat the oven to 200°C / 180°C fan.
  2. Peel the kohlrabi and cut it into even-sized cubes.
  3. Place the cubes onto a baking tray.
