Closed Cup Mushroom flavour is very mild. This is the most popular stage of growth at which white mushrooms are purchased. If allowed to grow further, the mushroom will become an open cup mushroom. Cups are button mushrooms which have grown to a stage where the cap is beginning to open and some gills can be seen. These have a stronger more mature mushroom flavour. Flats are harvested when the mushroom cap is expanded fully so that all the gills are visible.
