πŸ›’ Ingredients (Serves 2–3):

  • 1 large British aubergine, cut into thick rounds or cubes πŸ†

  • 2 tbsp olive oil πŸ«’

  • 2 cloves garlic, finely chopped πŸ§„

  • 1 tsp dried herbs (thyme, oregano or rosemary) 🌿

  • Salt & black pepper to taste

  • Optional: drizzle of balsamic vinegar or sprinkle of Parmesan to serve

  1. Preheat oven to 200Β°C / 400Β°F.

  2. Toss aubergine with olive oil, garlic, herbs, salt, and pepper.

  3. Spread on a baking tray in a single layer.

  • 2 medium British aubergines, halved lengthwise πŸ†

  • 1 tbsp olive oil

  • 1/2 onion, diced

  • 2 cloves garlic, minced πŸ§„

  • 200g chopped tomatoes (tinned or fresh) πŸ…

  • 1 tsp mixed herbs

  • 50g grated cheese (cheddar, feta, or mozzarella) πŸ§€

  • Salt & pepper to taste

  • Optional: chopped parsley or basil for garnish 🌿

  1. Preheat oven to 190Β°C / 375Β°F.

  2. Scoop out some flesh from each aubergine half and dice it.
