Ingredients:

  • 2 cups fresh basil leaves (packed)

  • 1/3 cup pine nuts (or walnuts for a budget-friendly option)

  • 2 garlic cloves

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup olive oil

  • Salt & pepper, to taste

  • Optional: a squeeze of lemon juice for brightness

Instructions:

  1. Toast the nuts (optional):
    In a dry pan over medium heat, toast pine nuts until golden and fragrant (2–3 minutes). Let cool.

  2. Blend it up:
    In a food processor or blender, combine basil, nuts, garlic, and Parmesan. Pulse a few times to break it down.

  3. Add olive oil:
    With the motor running, slowly stream in the olive oil until smooth. Scrape down the sides as needed.

  4. Season:
    Add salt, pepper, and lemon juice to taste.

  5. Use immediately or store in the fridge in a sealed jar for up to 5 days (top with a little oil to keep it fresh).
