Mrs Darlington’s Spicy tomato and sticky onion chutney. Darlington & Daughters, Lancaster Flied Made with Love ,Over 30 years ago, a surplus of our farm gave me the idea to make a batch of my Lemon Curd to sell locally. It flew off the shelves: so I drafted  in local ladies to help me make my other family recipes too. We’ve grown a great since then, but bringing you delicious tasing products is what my daughter and I remain  passionate about. Recipe :

Mrs. Darlington’s Spicy Tomato and Sticky Onion is a delicious condiment that adds a burst of flavour to sandwiches, burgers, and more. Here’s a recipe inspired by it:

Ingredients:
– 2 large onions, thinly sliced
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika

– 2 tablespoons olive oil
– 1/2 teaspoon chili powder
– 1/4 cup brown sugar
– 1/4 cup balsamic vinegar
– 1 can (14 oz) diced tomatoes
– Salt and pepper to taste

Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.

2. Add the minced garlic, ground cumin, paprika, and chili powder to the skillet. Cook for an additional 1-2 minutes until fragrant.

3. Stir in the brown sugar and balsamic vinegar, scraping any browned bits from the bottom of the skillet.

4. Add the diced tomatoes to the skillet, including the juice. Stir to combine.

5. Reduce the heat to low and simmer the mixture for 15-20 minutes, stirring occasionally, until the tomatoes have thickened and the flavours have melded together.

6. Season with salt and pepper to taste.

7. Remove from heat and let the relish cool to room temperature before transferring it to a jar or airtight container.

8. Store the Spicy Tomato and Sticky Onion Relish in the refrigerator for up to two weeks.
