Cheese Mashed Marfona Potatoes

Ingredients:

  • 1 kg Marfona washed potatoes, peeled and cubed
  • 100 ml milk (or cream for a richer texture)
  • 50 g butter
  • 150 g cheese (cheddar or your choice), grated
  • Salt and pepper, to taste
  • Fresh chives or parsley, chopped (for garnish)

Instructions:

  1. Place the cubed Marfona potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until tender.
  2. Drain the potatoes and return them to the pot. Add the butter and mash until smooth.
  3. Gradually stir in the milk (or cream) until you reach your desired consistency. Mix in the grated cheese until melted and well combined.
  4. Season with salt and pepper to taste.

Transfer the cheesy mashed potatoes to a serving bowl and garnish with chopped chives or parsley.

Recipe for Boiled washed potato marfona :

Ingredients:

  • 1 kg Marfona washed potatoes
  • Salt, to taste
  • Fresh herbs (like parsley or dill, optional)

Instructions:

  1. Wash the Marfona potatoes thoroughly to remove any dirt. If desired, you can peel them, but leaving the skin on adds extra flavour and nutrients. Then cut into 4.
  2. Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
  3. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  4. Drain the potatoes in a colander and let them sit for a minute to steam dry.

Marfona Washed Potato Chips

Ingredients:

  • 1 kg Marfona washed potatoes
  • Vegetable oil (for frying or baking)
  • Salt, to taste
  • Optional seasonings (paprika, garlic powder, or herbs)

Instructions:

For Fried Chips:

  1. Wash and peel the Marfona potatoes. Slice them thinly (about 2-3 mm thick) using a mandolin or sharp knife.
  2. Soak the potato slices in cold water for 30 minutes to remove excess starch. This helps them become crispier.
  3. Drain and pat the potato slices dry with a clean towel.
  4. In a deep pan or fryer, heat vegetable oil to 180°C (350°F).
  5. Carefully add the potato slices in batches, frying until golden brown and crispy, about 3-5 minutes. Stir occasionally to prevent sticking.
  6. Remove the chips with a slotted spoon and drain on paper towels. Sprinkle with salt and any desired seasonings while still hot.

For Baked Chips:

  1. Wash and peel the Marfona potatoes. Slice them thinly.
  2. Soak the slices in cold water for 30 minutes, then drain and dry.
  3. Preheat your oven to 200°C (400°F).
  4. Toss the potato slices with a little vegetable oil and seasonings. Spread them in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
