Recipe 1: Roasted Veggie & Herby Couscous Bowl
A vibrant, nourishing dish packed with roasted seasonal veg and fresh herbs.
Ingredients:

1x red pepper
-
1x courgette
-
1x aubergine
-
1x onion

300g carrots
-
1x lemon
-
A handful of mint
-
Olive oil, salt, pepper
-
200g couscous (or substitute with quinoa or rice)
Optional toppings: Cherry tomatoes, spinach, lemon zest
Instructions:

Preheat oven to 200°C.

Chop aubergine, pepper, courgette, onion, and carrots into chunks. Toss in olive oil, salt, and pepper.

Roast for 25–30 mins until caramelised.

Cook couscous according to pack instructions. Fluff and stir in lemon juice and chopped mint.

Serve couscous topped with roasted veg. Add a handful of fresh spinach and cherry tomatoes on top for freshness.
Great as a light dinner or hearty lunch. Add grilled halloumi or chicken for extra protein.7
Recipe 2: Hearty Vegetable Soup with Cabbage & Leek
A warming, comforting soup using classic root veg and greens.
Ingredients:

300g carrots
-
300g onions
-
1x leek
-
1/2 head hispi cabbage
-
500g potatoes
-
500ml vegetable stock
-
A handful of cavolo nero
-
1x lemon (juice)
-
Salt, pepper, olive oil
Instructions:

Roughly chop carrots, onions, leek, potatoes. Sauté in a large pot with olive oil until soft.

Add stock and simmer for 20 mins.

Add shredded hispi cabbage and cavolo nero. Simmer another 10 mins.

Season with salt, pepper, and a squeeze of lemon juice.
Serve hot with crusty bread or a sprinkle of cheese. Leftovers freeze beautifully!
