Classic Sunday Roast with Roast Vegetables

Youโ€™ll use from the box

๐Ÿฅ” Potatoes
๐Ÿฅ• Carrots
๐Ÿง… Onions
๐ŸŒฟ Parsnip
๐Ÿฅฌ Swede
๐Ÿฅฆ Broccoli or cauliflower
๐Ÿง„ Leek
๐ŸŒฑ Celery (great for gravy)

(Add your choice of meat or keep it veg with nut roast or extra potatoes.)

Step 1 โ€“ Prep

Heat oven to 200ยฐC / 180ยฐC fan.
Peel and chop everything into roasting-size pieces. Keep broccoli/cauliflower separate as they need less time.

Step 2 โ€“ Roast potatoes

Parboil potatoes 10 minutes. Drain, rough them up, toss in hot oil or fat, season well, roast 45โ€“60 mins until golden and crisp.

Step 3 โ€“ Roast the roots

Carrots, parsnip, swede and onions โ†’ oil, salt, pepper.
Roast about 35โ€“45 mins until tender and caramelised.

Add leek for the final 20 minutes so it doesnโ€™t burn.

Step 4 โ€“ Greens

Broccoli or cauliflower can roast for the last 15โ€“20 mins, or boil/steam if you prefer them softer.

Step 5 โ€“ Easy gravy boost

Finely chop a little onion + celery, soften in a pan, stir in gravy granules or stock, simmer 5โ€“10 minutes. Huge flavour upgrade.
