Classic Sunday Roast with Roast Vegetables

π₯¦ Broccoli or cauliflower

(Add your choice of meat or keep it veg with nut roast or extra potatoes.)
Step 1 β Prep
Heat oven to 200Β°C / 180Β°C fan.
Peel and chop everything into roasting-size pieces. Keep broccoli/cauliflower separate as they need less time.
Step 2 β Roast potatoes
Parboil potatoes 10 minutes. Drain, rough them up, toss in hot oil or fat, season well, roast 45β60 mins until golden and crisp.
Step 3 β Roast the roots
Carrots, parsnip, swede and onions β oil, salt, pepper.
Roast about 35β45 mins until tender and caramelised.
Add leek for the final 20 minutes so it doesnβt burn.
Step 4 β Greens
Broccoli or cauliflower can roast for the last 15β20 mins, or boil/steam if you prefer them softer.
Step 5 β Easy gravy boost
Finely chop a little onion + celery, soften in a pan, stir in gravy granules or stock, simmer 5β10 minutes. Huge flavour upgrade.
