Add your favourite roast meat, sausages or a vegetarian nut roast — or simply make the vegetables the star of the show.
👩🍳 Step 1 – Get Everything Ready
Preheat the oven to 200°C / 180°C fan.
Peel or scrub your vegetables and cut them into similar-sized pieces.
Keep the broccoli or cauliflower separate because it won’t need as long to cook.
🔥 Step 2 – Make Proper Crispy Roast Potatoes
Peel and cut your King Edwards into generous chunks.
Parboil them in salted water for around 8–10 minutes.
Drain thoroughly. Then give the pan a gentle shake to rough up the edges.
Transfer them to a roasting tray with hot oil or your preferred roasting fat.
Season and roast for around 45–60 minutes, turning during cooking, until beautifully golden and crisp.

🥕 Step 3 – Roast the Root Vegetables
Add your:
🥕 Carrots
🌿 Parsnip
🥬 Swede
🍠 Sweet Potato
🧅 Onions
Toss with a little oil, salt and black pepper.
Add rosemary or thyme if you have some.
Roast for around 35–45 minutes, turning occasionally, until tender and caramelised.
Add the leek later in the cooking time so it doesn’t become too dark.
🥦 Step 4 – Cook Your Greens
Steam or boil your broccoli or cauliflower until just tender.
Alternatively, roast it with a little olive oil, seasoning and garlic for around 15–20 minutes.
🫕 Easy Onion & Celery Gravy
Here’s where those onions and celery earn their place in the box!
You’ll Need:
- 🧅 1 Brown Onion
- 🌿 1 Celery stalk
- 🫒 Small amount of oil or butter
- 🥣 Vegetable, chicken or beef stock
- Gravy granules if desired
- Black pepper
Method:
Finely chop the onion and celery.
Cook gently in a saucepan with a little oil or butter until soft.
Add your stock and simmer for around 10 minutes.
Finish with gravy granules if you prefer a thicker gravy.
For a smoother finish, strain before serving.

You’ll Need:
- Leftover roast potatoes
- Leftover carrots
- Swede
- Broccoli or cauliflower
- Leftover leek or onions
- Salt & pepper
- Small amount of oil or butter
👩🍳 Method:
- Roughly mash your leftover potatoes and vegetables together.
- Season with salt and black pepper.
- Heat a little oil or butter in a frying pan.
- Add the vegetable mixture and press it down firmly.
- Cook until golden underneath.
- Turn sections over and continue cooking until you have plenty of crispy edges.

Several items are supplied as English produce, including the carrots, onions, parsnip and leek when listed as such. Origin can vary with season and availability, so I’d avoid describing the entire box as British unless every item is confirmed British.
What potatoes are included?
The box includes 2kg of washed King Edward potatoes, an excellent floury variety for roasting and mashing.
Can I use the box for meals other than a roast?
Definitely. The vegetables are also excellent for soups, stews, casseroles, traybakes, curries and homemade stock.
