π Ingredients (Serves 2):

150g fresh Shiitake Mushrooms, sliced π

1 tbsp sesame oil
-
2 cloves garlic, minced π§

1 tsp grated ginger
-
2 tbsp soy sauce
-
1 tsp rice vinegar or lime juice π
-
Optional: chili flakes, sesame seeds, spring onions, tofu

Heat sesame oil in a pan or wok over medium-high heat.

Add garlic and ginger; sautΓ© until fragrant (30 seconds).

Toss in shiitake mushrooms and cook for 5β7 minutes until tender and golden.

Stir in soy sauce and vinegar. Cook 1 more minute.

Garnish and serve over rice, noodles, or greens.

πππΏ Creamy Shiitake Mushroom Pasta
Rich, savoury, and full of umami β without the meat.
π Ingredients (Serves 2):

150g fresh Shiitake Mushrooms, sliced
-
200g pasta of your choice (tagliatelle, linguine, penne) π
-
1 tbsp olive oil
-
2 cloves garlic, minced π§
-
100ml plant-based cream or single cream π±
-
1 tsp soy sauce or tamari
-
Salt & black pepper to taste

Optional: fresh parsley, nutritional yeast, or vegan parmesan πΏπ§
π©βπ³ Instructions:

Cook pasta according to package instructions. Reserve some pasta water.

While pasta cooks, heat olive oil in a pan over medium heat.

SautΓ© garlic for 30 seconds, then add shiitake mushrooms.

Cook mushrooms for 5β7 mins until tender and lightly golden.

Stir in soy sauce and cream, simmer for 2β3 mins.

Add cooked pasta to the pan, toss well. Add pasta water if needed to loosen the sauce.

Season with salt and pepper. Top with parsley or vegan cheese.
