1. Creamy Leek, Potato & Cauliflower Bake
Comfort food at its best – warm, hearty, and packed with veg.
Ingredients:

2x Large Leeks (sliced)
-
1x Cauliflower (cut into florets)
-
500g Maris Piper Potatoes (peeled & thinly sliced)
-
1x Onion (sliced)
-
1x Garlic clove (optional)
-
200ml cream or milk
-
Grated cheese (optional)
-
Salt, pepper, olive oil
Instructions:

Preheat oven to 180°C.

In a pan, sauté leeks and onions with a little oil until soft.

Lightly steam or boil potatoes and cauliflower for 5–7 mins.

In a baking dish, layer the potato, cauliflower, leek/onion mix.
-
Pour over cream or milk, season, and top with cheese.
-
Bake for 30–35 mins until golden and bubbling.
Serve with a crisp side salad (lettuce, cucumber, tomatoes)
2. Veggie Stir-Fry Wraps with Sweet Red Pepper & Courgette
A quick, colourful dinner using fresh crunchy veg!
Ingredients:

1x Red Bell Pepper (sliced)
-
2x Courgettes (sliced)
-
1x Aubergine (diced)
-
1x Spring Onion (chopped)
-
1x Punnet Cherry Tomatoes (halved)
-
1x Head Lettuce or Mustard Cress for garnish
-
Olive oil, salt, pepper, lemon or lime juice
-
Tortilla wraps or pitta bread
Instructions:

Heat oil in a pan, stir-fry aubergine, courgette, and pepper until soft.

Add cherry tomatoes and spring onion, cook another 2–3 mins.

Season with salt, pepper, and a splash of lemon or lime juice.

Fill wraps with cooked veg, top with crisp lettuce or mustard cress.
Wrap, roll, and enjoy! Serve with fresh strawberries or grapes for a light dessert.
