π₯ 1. Creamy Leek, Potato & Cauliflower Bake
Comfort food at its best β warm, hearty, and packed with veg.
π Ingredients:

2x Large Leeks (sliced)

1x Cauliflower (cut into florets) π₯¦

500g Maris Piper Potatoes (peeled & thinly sliced) π₯
-
1x Onion (sliced) π§
-
1x Garlic clove (optional)
-
200ml cream or milk
-
Grated cheese (optional)
-
Salt, pepper, olive oil
π©βπ³ Instructions:

Preheat oven to 180Β°C.

In a pan, sautΓ© leeks and onions with a little oil until soft.

Lightly steam or boil potatoes and cauliflower for 5β7 mins.

In a baking dish, layer the potato, cauliflower, leek/onion mix.

Pour over cream or milk, season, and top with cheese.

Bake for 30β35 mins until golden and bubbling.

1x Red Bell Pepper (sliced) π«

2x Courgettes (sliced)

1x Aubergine (diced) π

1x Spring Onion (chopped)

1x Punnet Cherry Tomatoes (halved) π

1x Head Lettuce or Mustard Cress for garnish π₯¬

Olive oil, salt, pepper, lemon or lime juice π

Tortilla wraps or pitta bread

Heat oil in a pan, stir-fry aubergine, courgette, and pepper until soft.

Add cherry tomatoes and spring onion, cook another 2β3 mins.

Season with salt, pepper, and a splash of lemon or lime juice.

Fill wraps with cooked veg, top with crisp lettuce or mustard cress.
