Recipe for Stuffed Red Peppers

Ingredients:

  • 4 large red bell peppers
  • 1 cup cooked quinoa or rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions:

  1. Prepare the peppers: Preheat the oven to 180°C (350°F). Cut the tops off the red peppers, removing the seeds and membranes. Place them in a baking dish.
  2. Make the filling: In a bowl, mix the cooked quinoa or rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Stir until everything is well combined.
  3. Stuff the peppers: Spoon the filling into each pepper, pressing down gently to pack it in. If desired, sprinkle cheese on top of each stuffed pepper.
  4. Bake: Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender. Remove the foil in the last 5 minutes to allow the cheese to melt.
  5. Serve: Garnish with fresh cilantro and serve warm as a main or side dish.
