🛒 Ingredients – Serves 4–6

  • 1kg King Edward Potatoes 🥔
  • 3–4 tbsp olive oil, vegetable oil or your preferred roasting fat
  • Sea salt 🧂
  • Black pepper
  • 3 garlic cloves – optional 🧄
  • Fresh rosemary or thyme – optional 🌿

  1. Preheat the oven to 200°C / 180°C fan.
  2. Peel the potatoes and cut them into even-sized pieces.
  3. Place them in a saucepan of cold salted water.
