Here’s a simple and delicious recipe for stuffed green bell peppers:

Ingredients:

  • 4 large green bell peppers
  • 1 cup cooked rice (white or brown)
  • 1 lb ground beef (or turkey, or a meat substitute)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Olive oil (for sautéing)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the green bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish upright.
  3. In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and garlic until softened (about 3-4 minutes). Add the ground beef and cook until browned. Drain excess fat. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 2-3 minutes until heated through.
  4. Spoon the meat and rice mixture into each bell pepper, packing it in gently. Top each stuffed pepper with shredded cheese.
  5. Cover the baking dish with aluminium foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
