Ingredients:
– 3 cups cooked rice (preferably day-old rice)
– 4 cloves Chinese garlic, minced
– 2 tablespoons vegetable oil
– 2 eggs, beaten
– 1 cup mixed vegetables (such as peas, carrots, and corn)
– 2 tablespoons soy sauce
– Salt and pepper to taste
– Optional: chopped green onions for garnish

Instructions:
1. Heat vegetable oil in a large skillet or wok over medium heat.

2. Add minced Chinese garlic to the skillet and sauté for about 30 seconds until fragrant.
