🛒 Ingredients – Serves 2–3

  • 2 Fresh Yellow Courgettes
  • 1½ tbsp olive oil 🫒
  • 2 garlic cloves, finely chopped 🧄
  • 30g grated Parmesan 🧀
  • Salt & black pepper
  • Fresh thyme or parsley 🌿
  • Squeeze of lemon – optional 🍋

👩‍🍳 Method

  1. Preheat the oven to 200°C / 180°C fan.
  2. Wash and trim the yellow courgettes.
  3. Cut into thick rounds or half-moons.
  4. Place them in a large bowl.
  5. Add olive oil, garlic, salt and black pepper.
  6. Toss gently until coated.
  7. Spread across a baking tray.
  8. Roast for around 15 minutes.

  • 2 Fresh Yellow Courgettes
  • 200g pasta 🍝
  • 200g cherry tomatoes 🍅
  • 2 garlic cloves 🧄
  • 2 tbsp olive oil
  • 30g Parmesan
  • Fresh basil 🌿
  • Salt & black pepper
  • Chilli flakes – optional 🌶️

👩‍🍳 Method

  1. Cook the pasta according to the packet instructions.
  2. Slice the yellow courgettes into half-moons.
  3. Heat the olive oil in a large frying pan.
  4. Add the courgettes and cook for around 4–5 minutes.
