  • 4 William pears, peeled, halved and cored 🍐
  • 500ml water
  • 200g granulated sugar
  • 1 vanilla pod, split lengthways
  • 1 cinnamon stick
  • Zest of 1 lemon 🍋
  • Juice of 1 lemon

Method

  1. Add the water and sugar to a large saucepan.
  2. Add the vanilla, cinnamon and lemon zest.
  3. Pour in the lemon juice.
  4. Heat gently until the sugar dissolves.
  5. Bring to a gentle simmer.
  6. Carefully add the prepared pears.
  7. Simmer for approximately 20–25 minutes, turning occasionally.
  8. Check the fruit with a small knife. It should be tender while retaining its shape.
  9. Remove from the heat.
