  • 500g Greengages, halved and stoned 🍏
  • 400g granulated sugar
  • Juice of 1 lemon 🍋
  • ½ tsp vanilla extract – optional

  1. Place the Greengages and lemon juice in a large saucepan.
  2. Cook gently for approximately 10 minutes until the fruit begins to soften.
  3. Add the sugar.
  4. Stir over low heat until completely dissolved.
  5. Increase the heat and bring carefully to a rolling boil.
  6. Cook until setting point is reached.
  7. Check the set using an appropriate jam-setting test.

🛒 Ingredients – Serves 6–8

For the fruit layer:

  • 8–10 Greengages, halved and stoned 🍏
  • 2 tbsp soft brown sugar
  • 1 tbsp butter 🧈

For the sponge:

  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 eggs 🥚
  • 100g self-raising flour
  • 25g ground almonds 🌰
  • 1 tsp vanilla extract
  • 1–2 tbsp milk

👩‍🍳 Method

  1. Preheat the oven to 180°C / 160°C fan.
  2. Grease and line the base of a round cake tin.
  3. Melt the butter and brown sugar for the fruit layer.
  4. Pour into the base of the prepared tin.
  5. Arrange the Greengage halves over the mixture.
  6. Cream the softened butter and caster sugar until light.
