Ingredients – Makes 10–12
- 225g plain flour
- 150g Fresh Sweet Juicy Blueberries 🫐
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- Pinch of salt
- 115g softened butter
- 150g caster sugar
- 2 eggs 🥚
- 1 tsp vanilla extract
- 120ml milk or buttermilk
- Zest of 1 lemon – optional 🍋
Method
- Preheat the oven to 180°C / 160°C fan.
- Line a muffin tin with paper cases.
- Combine the flour, baking powder, bicarbonate of soda and salt.
- Beat the butter and sugar until light.
- Beat in the eggs and vanilla.
- Gradually combine the wet and dry ingredients with the milk.
- Gently fold through the Blueberries.
- Divide between the muffin cases.
- Bake for approximately 20–25 minutes until risen and golden.
- Allow to cool slightly.
