  • 4 Fresh Apricots, halved and stoned 🍑
  • 1 tbsp runny honey 🍯
  • 1 tsp olive oil or melted butter
  • Pinch of cinnamon – optional
  • ½ cup Greek yoghurt
  • Small handful pistachios or almonds 🌰
  • Fresh mint – optional 🌿

Method

  1. Preheat the oven to 180°C / 160°C fan.
  2. Arrange the apricot halves cut-side upwards in a baking dish.
