- 1 medium Fresh Romanesco, cut into florets
- 250g pasta
- 2 tbsp olive oil
- 3 garlic cloves, finely chopped
- ¼ tsp chilli flakes – optional
- 40g grated Parmesan
- Zest of ½ lemon
- Salt & black pepper
- Fresh parsley or basil
👩🍳 Method
- Bring a large pan of salted water to the boil.
- Cook the pasta according to the packet instructions.
- Add the Romanesco for the final 3–4 minutes of cooking.
- Meanwhile, heat olive oil in a large frying pan.
- Add garlic and chilli flakes.
- Cook for around 30 seconds until fragrant.
- Drain the pasta and Romanesco, reserving a little pasta water.
- Add both to the frying pan.
- Toss gently with the garlic oil.
- Add Parmesan and lemon zest.
- Season with salt and black pepper.
- Add a splash of pasta water if needed.
- Finish with fresh herbs and extra Parmesan.
