🔪 Preparing Fresh Ripe Juicy Mango

Mangoes contain a large, flat stone in the centre, but they’re easy to prepare once you know where to cut.

  1. Wash the outside of the fruit.
  2. Place the mango upright on a chopping board.
  3. Slice down one side of the central stone.
  4. Repeat on the opposite side.
  5. Score the flesh of each mango cheek into cubes without cutting through the skin.
  6. Push the skin gently upwards to expose the cubes.
  7. Slice or scoop the flesh away.
  8. Carefully trim the remaining flesh from around the stone.

There’s often plenty of good mango left there, so carefully trim or scoop it away to reduce waste.

  • ½ frozen banana 🍌

  • Handful of ice – optional 🧊

Method

  1. Add the mango to a blender.
  2. Add the banana.
  3. Spoon in the yoghurt.
  4. Pour in the orange juice or coconut water.
  5. Add lime if desired.
  6. Blend until smooth.
  7. Add ice for a colder drink.
  8. Serve immediately.

Method

  1. Place the diced Mango in a bowl.
  2. Add the red pepper.
  3. Add the red onion and coriander.
  4. Squeeze over the lime juice.
  5. Add chilli if desired.
  6. Season lightly.
  7. Mix gently.
  8. Leave for around 10 minutes before serving.
