Portobello Mushrooms are straightforward to prepare.

  1. Check the mushrooms and remove any loose growing material.
  2. Gently wipe the caps with a slightly damp cloth or mushroom brush.
  3. If necessary, rinse briefly rather than soaking.
  4. Pat dry after rinsing.
  5. Leave the stalk in place or remove it depending on your recipe.
  6. Keep removed stalks for sauces, fillings or other cooked dishes.
  7. Leave the caps whole or slice them as required.
  8. Cook until tender and piping hot.

Those beautiful dark gills are edible.

There’s normally no need to remove them. However, you can gently scrape them away with a spoon if you want extra room for a filling or don’t want their dark colour transferring into a pale sauce.
