  • 1 medium Daikon Radish 🥕
  • 240ml rice vinegar
  • 50g sugar
  • 60ml water
  • 1 tsp salt
  • Fresh ginger – optional 🫚
  • Chilli flakes – optional 🌶️

👩‍🍳 Method

  1. Wash and prepare the Daikon.
  2. Peel if required.
  3. Cut into thin rounds or matchsticks.
  4. Add the vinegar, sugar, water and salt to a saucepan.
  5. Add ginger if desired.
  6. Warm gently until the sugar and salt dissolve.
  7. Remove from the heat.
  8. Allow the liquid to cool.
