π₯π Slow-Roasted Vine Tomatoes
Easy, rich, and unbelievably delicious.
π Ingredients (Serves 2β4):

6β8 vine tomatoes, halved or left whole if small

1β2 tbsp olive oil
-
2β3 garlic cloves, smashed (optional) π§

A few sprigs of thyme or rosemary πΏ

Sea salt & cracked black pepper
π©βπ³ Instructions:

Preheat oven to 150Β°C (300Β°F).

Arrange tomatoes cut-side up in a baking dish.

Drizzle with olive oil, add garlic and herbs.

Sprinkle with salt and pepper.

Roast slowly for 1.5 to 2 hours, until soft, jammy, and caramelised.

Serve warm on toast, pasta, or with cheese β or store in a jar with extra olive oil in the fridge.
