Conference Pears require very little preparation.
- Wash thoroughly under cool running water.
- Pat dry.
- Eat whole around the core or slice the pear.
- To prepare for recipes, cut lengthways into quarters.
- Remove the central core and seeds.

Ingredients – Serves 2–4
- 2–4 Conference Pears, peeled, halved and cored 🍐
- 500ml water
- 2 tbsp honey or maple syrup 🍯
- 1 cinnamon stick
- Juice of ½ lemon 🍋
- 2 cloves – optional
- 1 star anise – optional
- Small piece fresh ginger – optional
Method
- Add the water, honey, lemon juice and spices to a saucepan.
- Bring gently to a simmer.
- Add the prepared pears.
- Simmer gently for approximately 15–20 minutes.
- Turn occasionally.
- Cook until tender while still holding their shape.
- Carefully remove the pears.
- Continue simmering the liquid until slightly reduced.
- Spoon the warm syrup over the fruit.

🥗🍐 Pear, Walnut & Cheese Salad

- 40g blue cheese, goat’s cheese or feta 🧀
- Small handful walnuts 🌰
- 1 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- Honey – optional 🍯
- Black pepper
Method
- Arrange the salad leaves on two plates.
- Add the pear slices.
- Crumble over your chosen cheese.
- Sprinkle with walnuts.
- Drizzle with olive oil and balsamic.
- Add a little honey if desired.
- Finish with black pepper.
- Serve immediately.

- 2 Fresh Juicy Conference Pears, halved and cored 🍐

- 2 tbsp rolled oats
- 1 tbsp chopped walnuts or almonds 🌰
- Small knob of butter – optional
Method
- Preheat the oven to 180°C / 160°C fan.
- Place the pear halves cut-side upwards in a baking dish.
- Mix the oats, cinnamon and nuts.
- Spoon into the centre of each pear.
- Drizzle lightly with honey.
- Add a little butter if desired.
- Bake for approximately 25–30 minutes until tender.
