🛒 Ingredients – Makes Approximately 2–3 Small Jars
- 500g Fresh Greengages, halved and stones removed
- 400g granulated sugar
- Juice of 1 lemon 🍋
- Optional: ½ tsp vanilla extract

- Place the greengages and lemon juice into a large saucepan.
- Cook gently for around 10 minutes until the fruit begins to soften.
- Add the sugar and stir over a low heat until dissolved.
- Increase the heat and bring to a rolling boil.
- Cook for around 10–15 minutes, stirring when necessary.
- Test the setting point using a chilled plate.
- Once ready, remove from the heat.
- Carefully transfer the hot jam into clean, sterilised jars and seal according to safe home-preserving guidance.

🛒 Ingredients – Serves 6–8
For the fruit layer:
- 8–10 Fresh Greengages, halved and stones removed
- 2 tbsp soft brown sugar
- 1 tbsp butter 🧈
For the sponge:
- 125g unsalted butter, softened
- 125g caster sugar
- 2 eggs 🥚
- 100g self-raising flour
- 25g ground almonds 🌰
- 1 tsp vanilla extract
- 1–2 tbsp milk
👩🍳 Instructions
- Preheat the oven to 180°C / 160°C fan / Gas 4.
- Grease and line the base of a round cake tin.
- Melt the butter and brown sugar together for the fruit layer.
- Pour the mixture into the bottom of the prepared tin.
- Arrange the greengage halves over the mixture.
- Cream the softened butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time.
- Fold in the flour, ground almonds and vanilla.
- Add a little milk if the mixture feels too thick.
- Spoon the cake mixture carefully over the greengages.
- Bake for 30–35 minutes, or until golden and cooked through.
- Leave to cool for 5–10 minutes before carefully turning onto a serving plate.
