Our Fresh British Tender Green Marrow is a traditional vegetable with pale, tender flesh and a wonderfully mild flavour that works beautifully in comforting home-cooked dishes.

Closely related to the courgette, marrow is allowed to grow larger before harvesting. Its generous size makes it particularly good for stuffing and baking, while its mild flesh absorbs herbs, spices, sauces and savoury flavours beautifully.

Roast it with garlic and herbs, add chunks to curries and casseroles, turn it into fritters or fill it with a rich homemade stuffing.

Marrow is a mature summer squash and is closely related to the familiar courgette.

Our Fresh British Tender Green Marrow has a larger shape, pale flesh and delicate flavour.

Younger marrows can have relatively tender skin and seeds. As the vegetable matures, the skin and seeds may become tougher, so these can be removed before cooking if preferred.

Marrow is straightforward to prepare.

  1. Wash thoroughly under cool running water.
  2. Trim both ends.
  3. Slice the Marrow lengthways.
  4. Check the centre of the vegetable.
  5. Scoop out particularly large or tough seeds if necessary.
  6. Peel the skin if it has become particularly tough.
  7. Cut into slices or cubes, or leave in halves for stuffing.
  8. Cook using your preferred method.

Stuffed British Marrow is a traditional family dish and a fantastic way to make the vegetable the centre of the meal.

🛒 Ingredients – Serves 4

  • 1 large Marrow, halved lengthways 🥒
  • 1 tbsp olive oil
  • 1 small onion, diced 🧅
  • 2 garlic cloves, chopped 🧄
  • 400g beef, turkey or plant-based mince
  • 400g chopped tomatoes 🍅
  • 1 tsp oregano or thyme 🌿
  • Black pepper
  • 50g mature Cheddar – optional 🧀

👩‍🍳 Method

  1. Preheat the oven to 190°C / 170°C fan.
  2. Halve the Marrow lengthways.
  3. Scoop out the large central seeds.
  4. Heat the olive oil in a frying pan.
  5. Cook the onion until softened.
  6. Add the garlic.
  7. Add the mince and cook thoroughly.
  8. Stir through the tomatoes and herbs.
  9. Simmer for approximately 10–15 minutes.
