Stuffed Flat Field Mushrooms
Golden, savoury, and packed with herby cheesy goodness.
Ingredients (Serves 2–4):

4 large flat field mushrooms, cleaned and stems removed

1 tbsp olive oil
-
1 garlic clove, finely minced
-
Mushroom stems, finely chopped
-
50g breadcrumbs
-
40g grated cheese (cheddar, mozzarella, parmesan, or vegan)
-
1 tbsp chopped fresh herbs (parsley, thyme, or basil)
-
Salt & pepper to taste

Optional: extra cheese for topping, or a drizzle of balsamic glaze
Instructions:

Preheat your oven to 180°C (350°F).

Place mushroom caps on a baking tray, drizzle with olive oil, and season lightly with salt and pepper.

In a bowl, mix the chopped stems with garlic, breadcrumbs, cheese, herbs, and a pinch of salt and pepper.

Spoon the mixture into each mushroom cap and press it down gently.

Bake for 20–25 minutes, until mushrooms are tender and the tops are golden.

Optional: grill for 2 minutes at the end for extra crispiness.

Serve hot, with salad, grains, or as a side dish.
