π«ππΏ Broad Bean, Lemon & Mint Salad
Fresh, zesty and full of vibrant flavour β the perfect summer side.
π Ingredients (Serves 2β4):

300g fresh broad beans, podded π«

Juice & zest of 1 lemon π

1 tbsp olive oil π«

1 small clove garlic, finely grated or crushed π§

A handful of fresh mint, finely chopped πΏ
-
Salt & black pepper to taste π§

Optional: 30g crumbled feta cheese or shaved parmesan π§
π©βπ³ Instructions:

Bring a small pot of salted water to a boil. Add broad beans and cook for 2β3 minutes.

Drain and rinse under cold water. For extra tenderness, pop them out of their skins (optional but worth it!).

In a bowl, whisk together lemon juice, zest, olive oil, garlic, salt & pepper.

Add beans and chopped mint, then toss to coat.

Top with cheese if using, and serve chilled or at room temperature.
