🫘🍋🌿 Broad Bean, Lemon & Mint Salad
Fresh, zesty and full of vibrant flavour — the perfect summer side.
🛒 Ingredients (Serves 2–4):

300g fresh broad beans, podded 🫘

Juice & zest of 1 lemon 🍋

1 tbsp olive oil 🫒

1 small clove garlic, finely grated or crushed 🧄

A handful of fresh mint, finely chopped 🌿

Salt & black pepper to taste 🧂

Optional: 30g crumbled feta cheese or shaved parmesan 🧀
👩🍳 Instructions:

Bring a small pot of salted water to a boil. Add broad beans and cook for 2–3 minutes.

Drain and rinse under cold water. For extra tenderness, pop them out of their skins (optional but worth it!).

In a bowl, whisk together lemon juice, zest, olive oil, garlic, salt & pepper.

Add beans and chopped mint, then toss to coat.

Top with cheese if using, and serve chilled or at room temperature.
