🫘🍋🌿 Broad Bean, Lemon & Mint Salad

Fresh, zesty and full of vibrant flavour — the perfect summer side.

🛒 Ingredients (Serves 2–4):

  • 300g fresh broad beans, podded 🫘

  • Juice & zest of 1 lemon 🍋

  • 1 tbsp olive oil 🫒

  • 1 small clove garlic, finely grated or crushed 🧄

  • A handful of fresh mint, finely chopped 🌿

  • Salt & black pepper to taste 🧂

  • Optional: 30g crumbled feta cheese or shaved parmesan 🧀

👩‍🍳 Instructions:

  1. Bring a small pot of salted water to a boil. Add broad beans and cook for 2–3 minutes.

  2. Drain and rinse under cold water. For extra tenderness, pop them out of their skins (optional but worth it!).

  3. In a bowl, whisk together lemon juice, zest, olive oil, garlic, salt & pepper.

  4. Add beans and chopped mint, then toss to coat.

  5. Top with cheese if using, and serve chilled or at room temperature.

Perfect as a BBQ side, picnic salad or served with grilled fish or crusty bread.
