  🛒 You’ll Need:

  From your box:

  • 🥔 1kg Seasonal Potatoes

  • 🧅 2 Onions (diced)

  • 🥕 500g Carrots (diced small)

  • 🥬 ½ Savoy Cabbage (shredded)

  • 🌱 200g Green Beans (chopped)

  • 🍅 Vine Cherry Tomatoes (halved)

  • 🌿 Spring Onions

  Plus:

  • 🧄 2 cloves garlic (optional)

  • 🫒 Olive oil

  • 🥣 400g tin chopped tomatoes

  • 🌿 Dried herbs or fresh thyme

  • 🧂 Salt & pepper

  • pepper

  👩‍🍳 Method

  1️⃣ Make the Mash

  Boil potatoes 🥔 for 15–20 minutes until soft.
  Drain and mash with a splash of olive oil and seasoning.

  2️⃣Cook the Filling

  In a large pan, heat olive oil 🫒 and sauté onions 🧅 and garlic.
  Add carrots 🥕 and cook for 5 minutes.
  Stir in:

  • Green beans 🌱

  • Tomatoes 🍅

  • Chopped tomatoes (tin)

  • Herbs 🌿

  • Salt & pepper

  Simmer for 10–15 minutes until thick.

  Stir in shredded cabbage 🥬 for the final 3–4 minutes to soften.

  3️⃣ Assemble & Bake

  Spoon the veg mix into an oven dish.
  Top with mashed potato 🥔 and rough up with a fork for crispy edges.
