🌶️🥬 Quick Chinese Leaf Kimchi (Mild & Easy Version)

Crunchy, tangy, and probiotic-rich — a great intro to fermentation!

🛒 Ingredients:

  • 1 head of Chinese Leaf, chopped into bite-sized pieces

  • 1 tbsp sea salt

  • 2 garlic cloves, minced

  • 1 tsp ginger, grated

  • 1 tbsp fish sauce (or soy sauce for vegan)

  • 1 tbsp Gochugaru (Korean chili flakes) or mild chili flakes 🌶️

  • 1 tsp sugar

  • 2 spring onions, sliced

👩‍🍳 Instructions:

  1. Place chopped Chinese Leaf in a large bowl, sprinkle with salt, and toss well. Let sit for 1 hour to draw out moisture.

  2. Rinse and drain thoroughly.

  3. In a separate bowl, mix garlic, ginger, fish sauce, chili flakes, sugar, and spring onions into a paste.

  4. Massage the paste into the cabbage until well coated.

  5. Pack tightly into a clean jar, pressing down to remove air bubbles. Leave 1-inch space at the top.

  6. Let ferment at room temperature for 1–3 days, tasting daily. Once tangy to your liking, store in the fridge.

🍽️🥢 Garlic Sesame Chinese Leaf Stir-Fry

Quick, healthy, and full of flavour — ready in 10 minutes!

🛒 Ingredients (Serves 2):

  • 1 small Chinese Leaf (Napa cabbage), chopped

  • 2 garlic cloves, thinly sliced 🧄

  • 1 tbsp sesame oil 🥢

  • 1 tbsp light soy sauce

  • 1 tsp rice vinegar or lemon juice 🍋

  • Optional: toasted sesame seeds, chili flakes, or sliced spring onions 🌶️🌿

👩‍🍳 Instructions:

  1. Heat sesame oil in a pan or wok over medium-high heat.

  2. Add garlic and stir until fragrant (30 seconds).

  3. Add chopped Chinese Leaf and stir-fry for 3–5 minutes until just wilted but still crisp.

  4. Add soy sauce and vinegar. Toss well and cook for 1 more minute.

  5. Garnish with sesame seeds or chili flakes and serve immediately.
