  • 2 British Free Range Eggs 🥚
  • 1 ripe avocado 🥑
  • 2 slices sourdough or wholegrain bread 🍞
  • Squeeze of fresh lemon juice 🍋
  • Sea salt
  • Cracked black pepper
  • Chilli flakes – optional 🌶️
  • Fresh herbs – optional 🌿
  • Crumbled feta – optional 🧀

👩‍🍳 Instructions

  1. Bring a saucepan of water to a gentle boil.
  2. Carefully lower the eggs into the water.
  3. Cook for around 6½ minutes for a soft centre.
  4. Transfer the eggs immediately to cold water.
  5. Toast the bread until golden.
  6. Mash the avocado with lemon juice, salt and pepper.
  7. Spread the avocado over the toast.
  8. Peel the eggs and carefully slice them in half.
  9. Place them on top of the avocado.
  10. Finish with chilli flakes, herbs or feta if desired.

🛒 Ingredients – Serves 2–3

  • 4 British Free Range Eggs 🥚
  • 1 tbsp olive oil 🫒
  • ½ onion, finely chopped 🧅
  • 2 garlic cloves, minced 🧄
  • 400g chopped tomatoes 🍅
  • 2 handfuls fresh spinach 🥬
  • ½ tsp smoked paprika
  • Salt and black pepper
  • Crumbled feta – optional 🧀
  • Fresh parsley – optional 🌿
  • Chilli flakes – optional 🌶️
  • Crusty bread for serving 🍞

👩‍🍳 Instructions

  1. Preheat the oven to 180°C / 160°C fan.
  2. Heat the olive oil in an oven-safe frying pan.
  3. Add the onion and cook until softened.
  4. Add the garlic and smoked paprika.

  • 2 British Free Range Eggs 🥚
  • 200g plain flour
  • 300ml milk 🥛
  • Pinch of salt

  1. Place the flour and salt into a bowl.
  2. Make a well in the centre.
