🛒 Ingredients (Serves 4):

  • 1 large head of broccoli, chopped (stems included!) 🥦

  • 1 medium onion, chopped

  • 2 cloves garlic, minced 🧄

  • 1 medium potato, peeled & diced (for creaminess) 🥔

  • 750ml vegetable stock

  • 1 tbsp olive oil or butter 🫒

  • Optional: 100ml cream or oat milk for extra richness

  • Salt & black pepper to taste

  • Optional topping: toasted seeds, croutons, or a swirl of cream 🌰🥖

👩‍🍳 Instructions:

  1. Heat oil in a large pan, then sauté onion and garlic for 2–3 minutes.
