Creamy Broccoli Soup (Dairy-Free Option Included)

Ingredients (Serves 4):

1 large head of broccoli, chopped (stems included!)

1 medium onion, chopped

2 cloves garlic, minced

1 medium potato, peeled & diced (for creaminess)

750ml vegetable stock

1 tbsp olive oil or butter

Optional: 100ml cream or oat milk for extra richness

Salt & black pepper to taste

Optional topping: toasted seeds, croutons, or a swirl of cream
Instructions:

Heat oil in a large pan, then sauté onion and garlic for 2–3 minutes.
