๐๐ฅ๐ฟ 1. Simple Roasted Aubergine with Garlic & Herbs
๐ Ingredients (Serves 2โ3):

1 large British aubergine, cut into thick rounds or cubes ๐

2 tbsp olive oil ๐ซ
-
2 cloves garlic, finely chopped ๐ง
-
1 tsp dried herbs (thyme, oregano or rosemary) ๐ฟ
-
Salt & black pepper to taste

Optional: drizzle of balsamic vinegar or sprinkle of Parmesan to serve
๐ฉโ๐ณ Instructions:

Preheat oven to 200ยฐC / 400ยฐF.

Toss aubergine with olive oil, garlic, herbs, salt, and pepper.

Spread on a baking tray in a single layer.

Roast for 20โ25 minutes, flipping halfway, until soft and golden.

Finish with balsamic or cheese if desired. Serve hot!
๐๐ ๐ง 2. Stuffed Aubergine with Tomato, Herbs & Cheese
๐ Ingredients (Serves 2):

2 medium British aubergines, halved lengthwise ๐
-
1 tbsp olive oil
-
1/2 onion, diced
-
2 cloves garlic, minced ๐ง
-
200g chopped tomatoes (tinned or fresh) ๐
-
1 tsp mixed herbs
-
50g grated cheese (cheddar, feta, or mozzarella) ๐ง
-
Salt & pepper to taste

Optional: chopped parsley or basil for garnish ๐ฟ
๐ฉโ๐ณ Instructions:

Preheat oven to 190ยฐC / 375ยฐF.

Scoop out some flesh from each aubergine half and dice it.

Sautรฉ onion and garlic in olive oil, then add chopped aubergine flesh. Cook until soft.

Stir in tomatoes, herbs, salt & pepper. Simmer for 10 minutes.

Fill aubergine shells with mixture, top with cheese.

Bake for 25โ30 minutes until soft and golden. Garnish with herbs.
