๐Ÿ›’ Ingredients (Serves 2โ€“3):

  • 1 large British aubergine, cut into thick rounds or cubes ๐Ÿ†

  • 2 tbsp olive oil ๐Ÿซ’

  • 2 cloves garlic, finely chopped ๐Ÿง„

  • 1 tsp dried herbs (thyme, oregano or rosemary) ๐ŸŒฟ

  • Salt & black pepper to taste

  • Optional: drizzle of balsamic vinegar or sprinkle of Parmesan to serve

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

  1. Preheat oven to 200ยฐC / 400ยฐF.

  2. Toss aubergine with olive oil, garlic, herbs, salt, and pepper.

  3. Spread on a baking tray in a single layer.

  4. Roast for 20โ€“25 minutes, flipping halfway, until soft and golden.

  5. Finish with balsamic or cheese if desired. Serve hot!

๐Ÿ›’ Ingredients (Serves 2):

  • 2 medium British aubergines, halved lengthwise ๐Ÿ†

  • 1 tbsp olive oil

  • 1/2 onion, diced

  • 2 cloves garlic, minced ๐Ÿง„

  • 200g chopped tomatoes (tinned or fresh) ๐Ÿ…

  • 1 tsp mixed herbs

  • 50g grated cheese (cheddar, feta, or mozzarella) ๐Ÿง€

  • Salt & pepper to taste

  • Optional: chopped parsley or basil for garnish ๐ŸŒฟ

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

  1. Preheat oven to 190ยฐC / 375ยฐF.

  2. Scoop out some flesh from each aubergine half and dice it.

  3. Sautรฉ onion and garlic in olive oil, then add chopped aubergine flesh. Cook until soft.

  4. Stir in tomatoes, herbs, salt & pepper. Simmer for 10 minutes.

  5. Fill aubergine shells with mixture, top with cheese.

  6. Bake for 25โ€“30 minutes until soft and golden. Garnish with herbs.
