🍆🔥🌿 1. Simple Roasted Aubergine with Garlic & Herbs
🛒 Ingredients (Serves 2–3):

1 large British aubergine, cut into thick rounds or cubes 🍆

2 tbsp olive oil 🫒
-
2 cloves garlic, finely chopped 🧄
-
1 tsp dried herbs (thyme, oregano or rosemary) 🌿
-
Salt & black pepper to taste

Optional: drizzle of balsamic vinegar or sprinkle of Parmesan to serve
👩🍳 Instructions:

Preheat oven to 200°C / 400°F.

Toss aubergine with olive oil, garlic, herbs, salt, and pepper.

Spread on a baking tray in a single layer.

Roast for 20–25 minutes, flipping halfway, until soft and golden.

Finish with balsamic or cheese if desired. Serve hot!
🍆🍅🧀 2. Stuffed Aubergine with Tomato, Herbs & Cheese
🛒 Ingredients (Serves 2):

2 medium British aubergines, halved lengthwise 🍆

1 tbsp olive oil
-
1/2 onion, diced
-
2 cloves garlic, minced 🧄
-
200g chopped tomatoes (tinned or fresh) 🍅
-
1 tsp mixed herbs
-
50g grated cheese (cheddar, feta, or mozzarella) 🧀
-
Salt & pepper to taste
-
Optional: chopped parsley or basil for garnish 🌿
👩🍳 Instructions:

Preheat oven to 190°C / 375°F.

Scoop out some flesh from each aubergine half and dice it.

Sauté onion and garlic in olive oil, then add chopped aubergine flesh. Cook until soft.

Stir in tomatoes, herbs, salt & pepper. Simmer for 10 minutes.

Fill aubergine shells with mixture, top with cheese.

Bake for 25–30 minutes until soft and golden. Garnish with herbs.
